Apple sponge cake

Easy recipe for apple cake lovers. Just few easy ingredients that can be found in any supermarket. I like to keep my recipes simple, recipes that anyone can make with ingredients that can be easily found. Not fancy stuff just real food for real people. 

Ingredients 4 servings:

  • 200gr rice/oat/wholemeal wheat flour

  • 2 apples

  • 2 eggs

  • 2 tbsp plain yoghurt

  • 1/2 tsp sugar free vanilla extract

  • Cinnamon

  • Stevia / Honey / Other sweetener

  • 1 tsp Baking powder

  • 1 tsp Yeast

Method:

  1. Pre-heat the oven 180C/355F/Gas 4

  2. Blend one and a half apple with a blender or food processor. Reserve the other half aple.

  3. Add the flour, yoghurt, eggs, stevia, cinnamon, vanilla extract, baking powder and yeast. Blend all together with the blended apple.

  4. Place the mix in a baking mould.

  5. Slice the half apple we have reserved and put it on top of the mix making a nice layer.

  6. Bake for 30 minutes.

  7. Once is cooked brush some honey for a shinny finish.
